‘Think Spring’ as Chez Mal at Malmaison Edinburgh, Launches New Spring Menu

Spring is finally here! Say goodbye to cold winter weather, warm clothes and hearty warming dishes! The temperature is rising, with the days showing signs of summer and flowers everywhere beginning to bloom. This is the perfect time to savour the flavours of spring. Not to mention fresh, seasonal produce is at its best around this time of year.
Restaurants are introducing new scrumptious spring menus and we decided to head back to Edinburgh, and see what one of our favourite restaurants had to offer.
Chez Mal Brasserie at Malmaison Edinburgh offers a fresh mix of contemporary styled dishes in a relaxed, but vibrant setting. Atmospheric and ambient, you can enjoy breakfast, lunch or dinner, with tip-top service.
The delicate and delicious tastes of new season produce and sunshine, all come together in Malmaison’s New Spring Menu. The team at Malmaison have created an easy, yet elegant, and very affordable menu (two courses for only £19.95 or three courses for only £24.95) infused with the fresh spring flavours including broad beans, peas, river trout, wild garlic and rainbow chard.
New starters on the spring menu include a range of lighter options, such as cauliflower velouté and fresh burrata, as well as more hearty options like spring lamb benedict.
Main options such as Chicken Milanese or Fresh Spring Vegetable and Wild Garlic Risotto will make your taste buds sing!
Malmaison Edinburgh never disappoints when it comes to delivering great food and great service. We were joined by fellow bloggers Adele (Tartan Spoon), Jonathan (5pm) and writers from I-on Magazine.
Our evening started with a warm welcome from Emma (Sales Manager) and a round of cocktails at the Chez Mal Bar.
Rhubarb and Basil Gimlet
I opted for Malchemy: Grapefruit and Lychee Collins: Finlandia grapefruit vodka, lychee liqueur, grapefruit. Others were enjoying Rhubarb and Basil Gimlet: Brockmans gin, Chase rhubarb liqueur, lime, sugar
The cocktails at Chez Mal are always very seasonal and fit in with global trends in mixology.

Bread and olives
Pickled cauliflower and spiced onion frita
The Cauliflower Velouté was one of the most delicious starters I've ever had at Malmaison. The elegant, smooth and creamy dish was bursting with flavours. A pickled cauliflower and spiced onion frita was the perfect complement, that added extra texture and a different dimension. It was a lovely light spring dish but when assembled, it was extra impressive when you pour velouté into the bowl.
Grilled masala spiced mackerel
Sweet potato and lime pickle, cumin raita
Mackerel is not one of my favourite fish, but it tastes great grilled. Mackerel is however very rich in healthy Omega 3 and packed with flavour and brimming with versatility.
The crispy grilled Mackerel was coated with an aromatic masala rub and served on a sweet potato chopped in squares. Because Mackerel has a strong flavour, it can handle strong spices like aromatic cumin raita. The dish was a delight to eat and I could still taste the fish through the spices.
Spring lamb Benedict
Slow braised Dorset lamb shoulder, American glaze, brioche and mint Béarnaise
Breaded chicken breast, Burford Brown fried egg, truffle mayonnaise and rainbow chard
The delicious tender and crispy breaded chicken breast, was packed with colours and flavours, accompanied by fried egg, truffle mayonnaise and rainbow chard.
I was positively surprised to see rainbow chard, and it was a great addition to the dish. The leaves had a mild, sweet and earthy flavour. The stalks resembled celery with a slight reminiscent of beets. Chards and Beets are related and similar in look, in fact, chards are beets without the root.
Gloucester old spot pork belly
Braised gem heart, fresh peas, Ramsay black pudding and Bramley apple purée
Pan-fried river trout
Pea and broad bean purée, Anya potatoes and truffle vinaigrette
This was a truly colourful and refreshing spring dish. The fresh spring peas and broad beans, blended with truffle vinaigrette were the perfect union. A green silky luscious sauce you will want to mop up with every one of these tender ‘Anya’ potatoes.

Pan roasted Jerusalem artichokes
Yorkshire rhubarb, vanilla custard and ginger crumble topping
Rhubard trifle was the perfect finishing touch to a spring dinner. Served in a glass, this pretty layered dessert of Yorkshire Rhubarb, Vanilla Custard and Ginger Crumble Topping, was a treat for eyes, as well as the palate.
This deliciously silky, creamy dessert, combined the tartness of rhubarb and sweetness of vanilla custard.
Iced coffee and praline parfait with chocolate sauce
The parfait was a beautifully creamy, but at the same time light and refreshing, and was the perfect finale after a filling dinner.
The new Spring Menu at Malmaison Edinburgh features colourful, vibrant and creative dishes at a great price. Food and drink lovers will enjoy their mouth-watering menu, bursting with bold flavours and fresh ingredients and accompanied by the expertly crafted Mal cocktails.
