I’ve always been a huge fan of Thai cuisine, which is one of the most popular cuisines in the world. It’s essentially a marriage of centuries-old Eastern and Western influences, harmoniously combined into something unique. Thai dishes are known for their blend of at least three fundamental taste senses, the spicy, the sweet and the sour, and they are always very colourful and satisfying not only to the eye but also to nose and palate.

The secret to Thai food is using the freshest ingredients, along with the skilful art of preparation and combining everything at the right time, to create an exceptional dish!

Thai cookery classes at Chaophraya Glasgow take place in one of the city’s most iconic buildings. Located in what was formerly The Royal Scottish Academy of Music & Drama, set over 4 floors, the restaurant impressively blends contemporary Thai design with the characterful heritage surrounds.  With breathtaking chandeliers and luxurious décor, you couldn’t possibly wish for a more exciting and delicious culinary experience.

Thai cuisine takes skilful preparation but you can easily learn the secrets with the expert guidance of the chef at Chaophraya.

On arrival, we received a very warm welcome along with a Mocktail, which got us into the spirit of the cooking class experience. Aprons and hats were also provided, both of which we could take home with us. At the end, we received a goody bag with recipes and Thai ingredients to recreate the dishes at home.

Our class started with an introduction to Thai ingredients and where to source them. Then we moved to the kitchen where we saw the demonstration of a starter and two main courses. After each demo, we got a hands-on practical session, where we could prepare and cook and eat the dishes demonstrated by the chef.

Our first dish was Papaya Salad (Som Tam). Fairly easy to prepare, the dish combined finely sliced papaya and carrot mixed with crushed chilli, garlic, peanuts, fine beans and tomato. Seasoned with fish sauce, lime and sugar was super easy to make.

Our first main course was Chicken Tom Yum (Tom Yam Gai). A bit more complicated a dish than papaya salad, but still easy to make at home. To boiled water, you need to add herbs, including chillies and soup stock. Once it’s dissolved, add fish sauce, sugar, chicken powder and fresh lemon juice. The next step is to add chicken and mushrooms and simmer until the mushrooms are cooked.

I loved that dish and I was immensely proud that I cooked it all by myself.

 

The final dish was Gai Pad Graprao (Stir-fry Chicken with chillies and basil)

Again, a simple and easy to make chicken dish. Cook the chicken first with garlic and chillies and once it’s cooked, add the rest of chopped vegetables and season with oyster sauce, chicken stock powder, sugar and soy sauce.

After the creative bit, we sat down, relaxed and dined on our tasty Thai dishes, which were accompanied with fragrant Jasmine rice. As we ate, we took part in a Q&A session.

If you like Thai food, or want to master the cooking art to impress your loved ones at home, then this is the course for you. You do not have to be a professional chef to cook amazing food, a good recipe combined with a great teacher and top quality ingredients can transform the way you cook at home.

Classes are taking place every Monday and Tuesday between 6 – 8pm (max 8 people per session) and will cost £60 per person.
